I replaced my battery, solenoid, and plugs. But when I try cranking it the starter stays engaged and I have to take my positive cable off. Any suggestions?

Start button sticking. Or a starter relay between the button and the solenoid is sticking.
This is assuming that it stays engaged because the starter is still electrically energized.

Starter clutch or "bendix" depending on how it is designed.
Look up a parts diagram someplace lke Bike Bandit.

If you have an Electric Motor shop nearby that does starters, they may be able to help.

Starter engages without a key or red start button on. Only have to touch the positive cable to the battery and it tries to crank????

Yes I understand that. What I said still applies.
You need a wiring diagram and a multi-meter to find out where the fault IS.
